刘维维,女,1992年生,博士,板栗研究中心贮藏加工实验室主任。 2019年毕业于华中农业大学食品科学专业,2017-2018年受CSC资助派往美国康奈尔大学进行联合博士培养,2020-2023年在北京工商大学从事博士后研究,2023年11月到河北科技师范学院板栗研究中心工作。
多年以来,一直从事天然产物化学相关研究,主要研究领域为食源性生物活性肽及其作用机制,如富硒大豆肽的护肝活性、GPX1过表达与妊娠期糖尿病发病率关系、小麦胚芽肽及米糠肽的降血糖活性研究等。目前主要从事低GI领域研究,承担国家博士后科学基金面上项目1项,河北省自然科学青年基金项目1项,博士启动基金1项,横向项目1项,十四五重点研发子课题1项;参与国家自然科学基金面上项目2项。以第一作者身份在国内外学术刊物上发表SCI论文9篇,申请实用新型专利2项,开发产品1款。
